With its name referring to the old Malabari term for a peacock’s tail, Blue Tokai sources its coffee from estates in Karnataka and Tamil Nadu.

On the difference between instant coffee and roast coffee, Chitharanjan said: “Instant coffee is simply dried coffee crystals that are dissolved in hot water. The process of drying brewed coffee to instant coffee and then back to drinkable coffee results in the loss of real coffee flavors and aromas.” “Instant coffee manufacturers try to make up for this loss by infusing aroma gases into dried crystals, but while the resulting cup smells a bit like real coffee, it never tastes as good as brewed coffee,” he explains.

The packaging of the coffee features several sketches by artists that reflect life on coffee farms. “If you look at the artwork behind our bags, you will see that each piece of art emphasizes the biodiversity or the everyday nuance of life on a coffee plantation,” said Blue Tokai co-founder Namrata Asthana, who also happens to be Chitharanjan’s wife. , said.

Blue Tokai opened their coffee roastery in South Delhi last month and they also have a 3-year-old outlet in the Gurgaon suburb of the capital.

“While Delhi is our home, Mumbai and Bengaluru also have a large population of people who would like to have a better coffee experience. We ship our coffee all over the country and most of our customers, after Delhi, are located in these two cities, said Chitharanjan.
